爬梯上非常受欢迎的【葱油凉拌意面】

有时候偷懒不想自己擀面条,用意大利通心粉来做个葱油凉拌意面,味道绝对好,带去爬梯或野餐都很棒。

用料:
1:意大利通心粉半包250克
2:盐1茶匙,油1茶匙;
3:白芝麻1.5大匙;
葱油汁:
4:橄榄油1大匙,葱花4大匙,姜蓉1.5茶匙;
5:盐1/2茶匙,万字牌生抽酱油1.5大匙,葡萄醋1.5大匙,蜂蜜1.5茶匙,白胡椒1/6茶匙,香油1大匙,辣油1大匙, 鸡粉1/6茶匙。 简易辣油:
6:葱2条洗净切段,姜一小块切片,大料1粒,丁香2-3粒,小茴香1/2茶匙,白芝麻1大匙,干辣椒片1/4杯,辣椒粉(paprika)3大匙;
7:菜油或玉米油1.5杯。
注:1大匙Tablespoon=15毫升,1茶匙Teaspoon=5毫升,1杯Cup=240毫升。

做法:

简易辣油:
1、将6料里的葱段和姜片先放入一小锅里,中火将葱姜的水汽烤干,放入剩余的6料(图1),再加入7料1.5杯菜油(图2),中火煮开,转小火熬煮20分钟(图3)。冷凉后,捞去葱姜大料不要,将油倒入一干净干燥的玻璃瓶里(图4),待辣椒片沉淀后,将上层辣椒油转入另一干净玻璃瓶里,放冰箱保存,随吃随用。 凉拌意面:
2、大号锅里放大半锅水,放入2料,开大火将水煮开。放入意面(图5)再煮滚,调中小火煮10左右分钟至断生,意面沥水。
3、趁煮面的空档,不粘锅置炉上开小火,放入1.5大匙生芝麻(图6),炒至芝麻微黄待用。 

、原不粘锅加橄榄油1大匙,炒香4料里的姜蓉和葱花(图7)离火待用。煮好的意面沥水后,放回大锅里,加入炒香的葱姜、熟芝麻及所有5料(图8)拌匀就可以了。

茶香熏鸭

茶香熏鸭

鸭子一只,鲜冻均可,洗净。
鸭子内外抹椒盐,俺是自个炒滴,也可以用现成滴,装入塑料代中过夜,中间翻一次。

准备Smoking Chamber,俺滴铝纸宽度不够,所以将两张拼成一张,两张接缝处要多折叠几次,以免影响密封。

将铝纸放在烤盘上,准备熏料:米,面,茶,糖(白糖,红糖均可),四等份,香叶,丁香,八角,花椒少许,陈皮一块。茶可以多放,普洱,茉莉花均可,最便宜的就行,俺用的是$4一大罐的茉莉花茶。您要是用¥500一两的也行,没人儿拦着您。

将各种熏料压碎混匀,烤架支上,将宝贝儿请出置于架上。注:不用洗,连盐一起烤。

将铝纸对折,封好,做成Smoking Chamber。注意,一定要封好封口,做到密不透风,不然,您就等着嚼炭玩儿吧。烤箱400F,3小时!你要疯?对,您要是想吃到茶香四溢的正宗熏鸭,一分钟都不能少!(不少网友反馈说俺的炉子的实际温度比显示的高,所以建议用425F)

P.S. 熏鸭过程当然会出很多油。
米面茶糖里的面是我多次试验后加滴,目的就是吸油。根据自己鸭子的大小肥瘦适量添加。
米面茶糖的量一定得足,至少至少也得每份满满一小碟(吃饺子蘸醋的碟子)。咱不是放鲍参翅肚,可劲儿的大碗儿量!!!俺的鸭子烤完后,底下的熏料就一层硬痂,连纸一扔完事儿。
另外有朋友提出,我的锡纸是两张拼的,所以密封可能不完全,才会有好的效果---这个有可能!俺烤得时候确实也看到烤箱出气口有少量蒸汽冒出!也会闻到小小气味,但决不会看到浓烟!烤完时,锡纸会鼓得像个大气球一样。
还有就是,鸭子除了椒盐,啥都不用抹,打开锡纸就是照片中的颜色。
总结一下:
第一,米面茶糖量要足;
第二,可用牙签在锡纸上扎几个小洞,让蒸气走掉;(但俺木有这样做过,仨小时,不知会不会弄得满屋子烤鸭味儿,也不知道最后鸭子会不会干)
第三,烤箱400F,仨小时,温度不能低,时间不能少 (不少网友反馈说俺的炉子的实际温度比显示的高,所以建议用425F)

许多网友询问如何熏制三文鱼,这里一并补上:
俺一般是一次熏4块:两块靠中段(带鱼腩)的鱼扒,一个鱼尾(片两半儿)。
腌制时用少量椒盐,腌料主角是李锦记叉烧酱。
熏制过程和熏鸭完全一样,区别只是时间,1小时20分钟。还是得注意密封,不然就等着吃鱼干儿吧。
为啥两块鱼扒+两块鱼尾?嘿嘿,鱼扒是为了品尝那外面焦脆而里面充满滑嫩油质的鱼腩,鱼尾自然是为了品尝焦脆的鱼皮。为啥选叉烧酱,这是俺个人的口味,俺是觉得油质比较丰富的肉类和甜味的酱料是蛮好的搭配。不过各人口味不同,鱼的部位和酱料,仅供参考,呵呵:)

吃在洛杉矶
很多朋友来洛杉矶玩都会来问一下洛杉矶有什么好吃的,我就稍微总结一下去过的地方吧。
从我们家Arcadia说起
鼎泰丰-不用说,这是知名的台湾品牌上海小笼包。 品种多,但是吧我真心没觉得有多好吃,有其一到周末那个人多啊!所以我去,也都是和朋友平常天去。如果为了吃品牌,那可以一吃,如果为了吃小笼包,那还是算了。
凤城 算是快餐吧?说不出来是哪里风味,应该是东南亚,如果不介意纯正不纯正,其实还是挺好吃的。口味有点偏甜,稍微被西化了的中餐。价钱也便宜,6-7块钱一个菜,外加鸡汤煮出来的米饭。 因为开到凌晨一点,甜点和饮品做的还是不错的,各种糯米类,冻糕,布丁,Mochi, 是和朋友晚上聊天的好去处。
梁妈妈家 - 台湾眷村特色?觉得就是综合台湾和北方菜,很多人都说好吃,但是真的不是我的那杯茶,所以在家门口我也就去过两次。
卤味居 面食馆,面类做的还是很好吃的,对于不会做水饺的人,水饺也还可以,但是不是咱家里做的那种感觉,总体说水饺不难吃。德州扒鸡做的很入味,但是要早去,要不然总卖完。 担担面是我的大爱!
私家小厨 牛肉卷饼做的还不错,天津人开的,特意点了锅贴,皮厚,而且味道太淡了,煎出来就是下面那层面脆太后了,皮都还破了。感觉是面的感觉,没有筋。素包子真的好吃,跟家里味道完全一样,就是天津包的韭菜,粉丝,干虾。 嘻嘻,三鲜肉包子真的也是和家里一样,猪肉,虾仁,还有木耳!说实话,没我妈包的好吃。私家小厨真的是家常菜,喜欢吃包子,饺子,自己又不会做的去这里还是挺好的。
稻香 应该是典型的港式西餐。味道不错,也是开到凌晨一点。但是有一次和LG 晚上11点去的,说要关门了。 吃的嘛,基本都是粤菜。我觉得比Arcadia其他粤菜馆都要好吃,而且带着我ABC的弟弟来,也会有和他口味的东西。
永东豆腐 以前在Arcadia是最好吃的豆腐煲店,但是自从今年换了老板就开始走下坡路了。东西味道没以前好了,而且服务也跟不上了,有点让人郁闷。比如牛仔骨,以前是胭脂的味道很弄,而且肉很嫩,很juicy, 现在好像都没怎么胭就烤了,而且肉都是干干的。 去了两次都觉得不好,感觉哪里不对,这么多年的店怎么一下子就变这样了,问了才知道,原来换老板了。 所以现在想吃永东豆腐都是去San Gabriel那一家了。
Orchid Thai - 泰国餐,去了两次,没啥特别感觉,不如另外一家外卖店的东西。貌似是华人开的。喜欢吃泰国料理的朋友可以考虑去President Thai, 离着不远。
四海 老店在Arcadia新开的分店,传统台湾早餐,其实也就是咱北方那点早餐带点台湾味。 我最喜欢酸菜牛肉烧饼,荷叶包夹着这肉和酸菜,咸豆脑 (我LG喜欢甜豆花,我真心没办法接受,南北差异啊)。 早上起来不想去吃点心,可以过来来碗豆浆配上油条外加萝卜糕,烧饼,小菜,也是非常舒服的。 
臭豆腐大王 也是Rowland height的老店,跑来我们这里开的,我以前只要去rowland height就一定会去的。$5一份臭豆腐 (要普通的啊,千万别要一口香)千万别再车里吃,味道不容易散掉,我是赤裸裸的例子啊,我儿子一进去就捏着鼻子说粑粑味。 喜欢吃臭豆腐的别错过!
鱼屯海鲜 这个真心可以错过,味道特别一般的粤菜,而且觉得不干净。两次在我的汤里发现小蟑螂,还非说是自己飞进去的。。。现在基本不去。而且也没啥海鲜。
沸点 台式小火锅,方便啊,11-15块一个人,一个小火锅,高汤锅底,味道也很不错。就是吧,最近把猪血换成猪血糕了!!鄙视鄙视鄙视!!我最讨厌猪血糕!!!这个是年轻人来洛杉矶必去的地方,但是我80岁的奶奶都爱来啊 (人老心不老咔咔)!

辛巴乐 - 台湾小吃店,也是快餐类的。鸡卷,蛤仔煎都是必点的。他们是香肠店,所以香肠配着蒜片那叫一个好吃。排骨饭,扣肉饭也都是常点的。还有小凉菜也都很好吃,这个羹那个汤的也都不错,我们家两个娃每次来这里吃的都很开心。

美味居 - 粤菜,味道过的去,但是我总是觉得吃完不干净,我老爹每次一来这里回家就会拉肚子。

楼外楼 - 应该是上海菜,但是里面又有很多北方面点。来过两次,没有特别印象,上次让LG打包一个东坡肉回家,基本肉咬不烂,不是其他店那种入口即化的感觉。所以被我pass之。 
JJ Bakery - 早上7-10点是早点,和四海差不多,但是豆浆比四海更浓一些烧饼和油条都太油了,还是去四海吧。 面包和蛋糕在这附近还算不错了,除非要再开远一点。
Arcadia基本就这样了,还有很多其他小馆,就不一一介绍了, Arcadia 麻雀虽小,五脏俱全,只要要求不错,从日本寿司到韩国烧烤都是有的,但是我有点挑,所以我情愿开车远一点去吃好吃的。咔咔

食療系列-補血
藥補不如食補,在日常飲食中注意營養的合理搭配,並適當補充補血補氣食物,有助女性防病抗病,下面介紹幾種補血甜湯。

銀耳紅棗湯
銀耳又稱為「窮人的燕窩」,燕窩雖補,卻價格昂貴。銀耳無論顏色、口感、功效都和燕窩相似,價格便宜,所以稱為窮人的燕窩燕窩太補易上火。銀耳為涼補有潤燥的作用。燥氣和火氣就像急性慢性病,火氣來得急去的快。但是火氣太久未消就會轉成燥氣所以吃銀耳最有效銀耳、用桂圓干、枸杞、紅棗銀耳熬湯,銀耳紅棗湯不但是美味的豐胸小點,還能使你的臉色白裡透紅,體態輕盈苗條。
黑糯米補血粥
黑糯米、桂圓和紅棗是補血的好東西,再加上營養價值很高的山藥,益氣養血的功效更顯著,每個月喝。用黑糯米、紅棗、桂圓、山藥、紅糖煮,但桂圓雖然可以補血氣、促進血液循環,但不易消化,每次盡量下78個就可以(寒胃的朋友可以下2片紅參)
當歸紅棗排骨
治皮膚轉季乾燥粗糙,皮膚瘙癢。排骨一根,枸杞,紅棗12枚,當歸4片,排骨洗淨血水川燙過水,放入沙鍋加入枸杞紅棗當歸、蔥、薑片,大火燒開,再小火燉至排骨蘇爛,鹽、雞精調味即可。以上幾種食材配在一起燉煮,就能收到滋陰潤燥,養顏護膚的輔助作用。
養顏補血燕麥粥
先泡好核桃.紅棗.龍眼干.把燕麥清洗乾淨倒進電飯鍋裡,加適量的水,開煮咯!記得要看時間啊!粥滾開了就換到熬粥檔啊!出鍋前放了些紅糖
雙紅補血湯
紅薯500克,紅棗10克,紅糖適量。清水2000毫升然後一起下鍋煮開,紅薯熟才下紅糖這個夏天經常吃的甜品,喜歡吃南瓜的也可以把紅薯換成南瓜。
養顏的木瓜銀耳湯
銀耳、木瓜、紅棗、冰糖,把泡發的銀耳下鍋煮開下紅棗關小火熬半個鐘頭,下冰糖和木瓜煮開就可以盛起了。

薏米红豆粥

很多跟我见习的学生问我:“早就听说您善用经方, 但现在看您的方子,怎么连经方的影子都找不到呢?”“经方”即经典的药方,也就是张仲景在《伤寒论》和《金匮要略》中列举的方子。实际上,经方不是死的, 它们千变万化,可以根据临床加减。我只是在张仲景的原方上做的加减比较多而已,其实依然完全是经方的思路。把经方用到这种程度,是需要功夫的,我不要求学 生马上做到这一点,而是让他们先好好学习经方,掌握经方,以后再结合临床慢慢体会,学会加减。此法甚好,能把学生一步一步地引导上去。
在传授养生方面,我也遵循这个思路,不紧不慢地引导大家逐步深入。前不久,我给了大家一个去除湿气的食疗方:薏米红豆粥。大家在使用的过程中都或多或少有 了体会,很多朋友都发来良好的反馈,说是有效果;有的朋友结合具体的疾病,问得更详细;还有的朋友问,能不能在薏米红豆粥里加点别的东西。看了这些问题, 我很欣慰,感觉有必要更进一步,向大家介绍薏米红豆粥的加减法了。
平日思虑伤神、劳心过度而运动量少的人,往往脸上没有血色,精神也不够充沛,甚至心悸、贪睡,感觉头重如裹,心中空虚。这是体内有湿加上心气不足的表现, 可以在薏米红豆粥中加一些桂圆同煮。桂圆甘温,能开胃健脾、安神补血,能振奋心阳,温补心气,使人精神饱满、中气十足。而且,单纯的薏米红豆粥味道很一 般,加上桂圆后,就变甜了,淡淡的甜味,来自炎热的南方,纯属天然,它不仅能驱散我们体内的湿气,而且给我们的心带来生机与温暖。我们就叫它薏米红豆桂圆 粥吧,它特别适合强劳力劳动者,也很适合中老年人。
年轻人容易出现烦躁失眠,或者脸上起红疹、痘痘,这都是心火过旺、湿热内扰所致,可以在薏米红豆粥中加上百合或莲子同煮,或者两种都加。百合能润肺、养 颜,又能清心火、安心神。莲子最能养心、清心火,同时又能健脾、补肾,但是莲子稍有滞涩作用,身体比较瘦弱的人可以用,但那种体内淤滞较多的胖子恐怕就不 宜用了。用莲子的时候,要去掉里面的心。当然,如果嫌这个粥没有什么味道,还可以加点冰糖。在各类糖中,只有冰糖是凉性的,能清心火。
如果着凉感冒了,或是体内有寒,胃中寒痛,食欲不佳,可在薏米红豆粥中加几片生姜。生姜性温,能温中驱寒,健脾和胃。注意,生姜不可多放,多放就使粥变得 辛辣了。如果想在这个粥里加点调味的,那就只能放红糖了,红糖也是性温的。值得一提的是,妇女产后的保养时,喝这个粥要去掉薏米,可在其中再加点大枣,大 枣能温中、健脾、养血是非常适宜的。
肾虚的人,可在薏米红豆粥中加一些黑豆。因为黑色入肾,而豆的形状也跟肾十分相似,是补肾的佳品。
现在人们常说的脚气病,的典型的湿热下注。可在薏米红豆粥中加上黄豆,食其粥,同时用熬出来的汤洗脚。内外同治,效果甚佳。
如果咳嗽,还可以把生梨去皮去核切成1-2厘米见方的小块儿,加入薏米红豆粥中同煮,可以润肺、化痰、止渴。
山药和南瓜也可以放在薏米红豆粥中同煮。山药号称“气死小人参”,有时候,它比人参的补益作用还大,它是补脾胃的圣品,而且能强肾固精,润肺益气。南瓜能 补中益气,还能消炎、止痛、杀虫、解毒,它是直接入我们的胰脏的,对保护胰脏,预防糖尿病来说,是非常好的东西。曾有病人向我反应,他和爱人、儿子坚持每 天晚餐吃薏米红豆南瓜粥,吃了28天后,三个人的大便都变成了“金黄色的圆柱体,香蕉型的很通畅”了。我说:“不错,你统计得很准确,28天,正好是人体 的一个生物周期。经过了一个周期的调理,终于见到效果了。”
经常有人问我:“能不能在薏米红豆粥里加芡实?”我不明白大家为什么对芡实如此情有独钟,是因为它很贵么?是因为古人推崇“芡实补虚”么?芡实固然是好东 西,但不是所有人都能吃的。芡实性涩,对于那些身体虚弱,甚至出现早泄、遗精、滑精的人来说,它可以固涩精液、补中益气,是滋养气血、使人强壮的食品。但 现代人生活条件这么好,真正体虚的恐怕没几个,大多数人体内都是实邪壅滞,如果再吃固涩性的食物,只恐把邪气敛在体内,后患无穷。虽然《神农本草经》中将 芡实列为上品,但我们也不能迷信古人的说法,还得根据现代人的体质而取舍啊!
还有一点值得说明一下,怀孕中的孕妇要是自我感觉没有很重的湿邪最好慎用或忌用薏米,但可用红豆,我们可以给薏米红豆汤做一个减法,减去薏米,再根据上面的思路做加法,可以适量加些大枣百合枸杞等其它的品类。同样能做成既能去湿,又有其他效果的汤来。
这里是一个基本的思路,大家可以多了解各种食物的性、味,举一反三,自己进行加减,组成更多适合自己体质的饮食来。这样,食物才能真正成为养生的佳品。最后还是要强调一下不要加大米哟!因为那就有违此方的初衷了!

牛排切好后,最好不再水洗,如果非得洗,记得在水龙头下流动的水迅速洗过,立马用paper towel将两面擦干。
以每块牛排1磅为例。
1)每面均匀洒约1 tea spoon的生抽,用手抹匀
2)两面均匀洒适量粗粒黑胡椒粉
3)每面均匀洒约1 tea spoon 的牛排粉,见图,一定要这个牌子的!
4)把大蒜头拍平,每面牛扒放几瓣
5)色迷迷地用手给牛扒按摩1至2分钟,每面;把上面这些调料都抹匀
6)将尽享色情服务后的牛扒每块单放zipper bag内,放泠藏室醃3或4小时
 
 
1)用猛火将平底炒锅烧热到铁板烧发烫的程度
2)从牛扒边上切下一小块牛油,放热锅里烧出油,


用这一肥油擦遍锅里比牛扒稍大的一块地方
3)将醃好的牛扒平放入热锅中,稍用力用铲子把牛扒压实,
上面搁着醃料中的蒜瓣泥
4)保持猛火4至5分钟,直至下面的牛扒微棕色( 这个都凭经验听声音),如果牛扒太厚,比如超过1吋半,
在此后加中火1至2分钟
5)恢复猛火,将牛扒翻面,重复3,保持猛火4分钟,
如牛扒太厚,此后改中火加锅盖焖1分钟左右,然后开盖,恢复猛火约1至2分钟,此时用铲子轻触牛扒测试成熟度(见以下注)
6)迅速起锅装盘,将锅内的汁倒在牛扒上,
静呆3分钟后方可切开牛扒,这时牛扒又熟了百分十,所以要六分熟的,出锅只能五分熟

牙米牛扒的绝窍:
1)下锅或翻面时,火一定要最猛,sear 外面才可以外焦里嫩,煎大鱼排同理
2)少翻动牛扒,中间只可翻面一次
3)查看火侯时千万不得切开牛扒,只可用铲子触碰测试
4)不可放烤箱烤
5)牛排吃原味,不能沾酱料


不出血水:
1.热盘子。 在微波炉里转一分钟。
2.放5分钟(最好用锡纸盖下)

无论几分熟的牛肉都不会出血水了

牛排煎3分熟,热盘5分钟, 切3cm大块, 牛油热锅,爆洋葱,下黑椒酱(豆瓣,老干妈),牛肉块进去滚一下出锅(6-7分熟)。

Building your own outdoor ping pong table can be a great project. Not only can you save money, but you’ll end up with a one of a kind table that can add a great new element to your backyard fun. This requires light carpentry skills but will only cost you about $80-100. Build time: 1 afternoon, plus painting. Here’s what you need:
• Two 2 x4 boards in 8 foot lengths.
• One 4x8 MDF (medium density fiber) board. MDF handles temperature changes better than wood. (A regulation table is 5’ x 9’, but who cares about those few inches when we’re just talking about having some outdoor fun for parties and kids.)
• 4 legs. Buy a cheap dining table at a thrift shop just for the legs. (I found a table for $20, whereas buying wood legs through eBay or at a wood shop will cost much more.)
• Trim wood for the skirt—two 3’ lengths, and two 7’ lengths, plus about 4’ extra for bracing the legs
• Latex porch paint (blue or green) for the legs and top, plus some white for the lines
• Attachable net/balls/paddles—an inexpensive buy at any sporting store.
• Plastic covering—a good option is to buy 4 yards of plastic or vinyl at a fabric shop—like raincoat material—this is often less than $5/yard and bolts come in 68-74” widths, so it’s wide enough to simply drape over the top of the table when not in use. (Or just buy a ping pong table cover if the price is right.)
First, you want to create the support for the table. (See illustration photo.) Place MDF board on level surface, with the top side down. Arrange your 2 x 4s on the MDF surface like a ladder. Glue in place and screw together. Then attach the skirt sides. Use the legs to help you mark out the exact for placing the skirt and corner pieces. Glue and screw skirt and corner braces into place. All of the support should be secured to the MDF surface. Next, attach the legs to the skirt/base just as they were in the original table. Often, the legs have bolt-like screws that get secured through the corner braces. (This construction allows you to easily remove the legs and store the table at the end of season.) Stand the table upright and paint all exposed surfaces with your blue or green paint. Once dry, mark off the outer edges (about 1 inch) of entire table as well as a strip down the center with painters tape and paint the white lines. For extra fun, let your kids help decorate the table with their own artistry. Finally, attach the net and Voila! Game on!

冰皮月饼的皮经过几番修正后,现在使用的配方比例如下:
糯米粉 150g,粘米粉 150g,澄粉 70g,牛奶 450g,玉米油 55ml,糖 100g,练乳 30g
澄粉,又叫小麦淀粉, 加入的目的是为了增强冰皮的透明度。粘粉,又叫大米粉,其实并不粘,用来减低糯米粉的软糯度。冰皮月饼的成型和口感极受糯米粉,粘米粉和澄粉三者比例的影响,所以力求精确。
将上面的冰皮用料调成粉浆,静止30分钟,等到粉浆充分柔顺后,放入微波炉中加热约67钟,期间大约每两分钟取出搅拌一下,直到粉团透明至熟。
待粉团冷却后,用力搓揉,搓揉越久口感越佳,同时可以加入各种色料,如抹茶,可可粉等,调出自己满意的颜色。

转化糖浆 (原方是爱厨的)
材料:
砂糖 800 克;
水 300ml ;
柠檬汁 6 大勺( 2 个柠檬鲜榨过滤);
白醋 2 大勺;
碱水 1/4 小勺

做法:
1. 砂糖加水煮至糖融化,转小火,加入鲜榨柠檬汁(过滤过的)和白醋,继续煮至约 225 °F (原方是 108 °C )。温度达到后,改微火继续煮 30 分钟至上色。
2. 熄火待凉,加入碱水拌匀,室温保存。


广式月饼皮 (也是爱厨的原方)
材料  :
低筋面粉 200 克
转化糖浆 110  克
花生油 55 克
碱水 ½ 小勺
盐 少许

配方2:
低筋面粉150g,转化糖浆 75g,花生油40g,碱水半小匙,盐少许。

做法:
1. 混合所有转化糖浆、花生油、碱水(小苏打水)、盐,拌匀后,加入所有低筋面粉揉匀成团状,覆盖保鲜膜,静置1小时。
2. 取出即可使用)

放入铺了烤盘纸的烤盘里并放入预热至395oF/200oC的烤箱内,烤6分钟后,拿出刷上少少量的蛋液,温度调低到340oF/170oC 烤7分钟。然后拿出再刷一次蛋液再 烤7分钟,最后开Broil低档2到5分钟上色即可(图15)。各家的烤箱不同,注意掌握温度及时间。月饼冷后放入密闭盒里回油两到三天再吃

这是我做广式月饼以来所总结出来的经验,有想在家做广式月饼的可以看看。
1:五仁馅:如果是自家做五仁馅的话可以配的随意些,怎么喜欢怎么来的,买的话可以在水果市场或干货店能买到五仁的材料。2:方子:不得不感叹想做好广式月饼方子也是很重要的,去年从网上搜的一个方子做的,但效果很差,不仅上的色不好看,和皮的时候也是不好操作,今年从一个面点师那得到一个超好使的方子,这个方子包的时候皮软,但烤好后很脆,还很有型,上的色也很漂亮,喜欢广式月饼的可以试试这个方子。3:和面&醒面:和皮和醒面各2次,第一次和好后醒半小时后,在揉一次面团,再醒个20分钟后才能进行操作。4:碱水:可用食用纯碱与水1:3配制或1克小苏打+10克清水配制,或买现成的,还有月饼的上色跟碱水有关,不可以放的少了。5:比例:做广式月饼讲究皮薄馅多,但做五仁馅皮薄的话就和我一样了烤完后月饼容易下腰,因为馅有些重量,皮有些承受不住。。6:几头月饼:模子的大小都不一样,所以有3头,4头,5头等的叫法,以4头为例,4头就是1斤做4个的意思,其他几头同样。7:蛋液:想刷出好看的颜色必须是蛋黄加少许盐调制出来的浓稠适中的蛋液来。8:温度:就根据自家的烤箱来调了,月饼其实高温烤出来的好看些。9:2次烤制:要想月饼颜色好看,还有一个地方是必不可少的,就是在烤的时候,先什么也不刷烤个7,8分钟上下色,然后在刷层蛋液烤制是最好。10:刷子:刷蛋液的刷子一定选用的好用些的,要不老是掉毛,还有刷的时候轻轻的来回的刷几次,不要太使劲,使月饼表面全能刷层蛋液。11:回油:广式月饼在做好后,回油个3天左右是最佳的时间,回油后月饼既好看油好吃。


材料:(这里是以6头75g模子为例)
五仁馅:瓜子仁100g,桔饼丝50g,菠萝丝40g,花生65g,黑芝麻30g,松仁30g,核桃10g,白糖70g,植物油30ml,白酒10g,水80g,熟糯米120g
月饼皮:糖浆175g,碱水3g,低筋粉250g,植物油65g,盐5g


准备工作:
1:备好材料。2:锅烧干,烧热,倒入糯米炒至发黄,吃起来不带生味即可。3:瓜子仁倒入锅中炒至焦黄即可。4:黑芝麻炒熟即可。5:花生在锅中炸熟即可。6:材料中大些的材料切碎,都倒入盆里,再倒入白糖70g,植物油30ml,白酒10g,水80g搅拌均匀。7:再分次的倒入熟糯米,直到馅能揉成团,软硬适中为止。8:转化糖浆175g,植物油65g,碱水3g倒入盆里搅拌均匀。9:倒入低筋粉,盐搅拌。10:揉成团,盖上保鲜膜室温放置1小时。
正式工作:
1:五仁一个为57g揉成团,皮一个为18g揉成团。2:取一个皮,放入一个五仁馅。3:从下往上推。4:包起来。5:在手上沾层薄薄的面粉,放上月饼馅转动手,使月饼馅沾一层面粉。6:压出月饼来。7:上火200度,下火220度先烤7,8分钟。8:拿出来轻轻的刷层蛋黄液。9:再烤个5分钟左右。

今天刚做完第一批月饼,每年都做,月饼易做,难的是馅,要炒出超细腻的豆沙和莲蓉真的很难,往年炒400G豆沙就要1个半小时以上,还要溅得到处都是,又要打扫战场,真有点怕了,可是家人和朋友爱吃呀!还得做!今年做得真的很快,很轻松,上来和大家分享一下我的做法,今年有点迟了,希望明年对和我一样怕炒豆沙的人有帮助

1. 红豆加水,水不能太多,我是用电高压锅煮了1 个多小时,煮烂. 煮好的豆沙如果有多余的水倒掉,
2. 用Hand Blender打碎,不用加水,打完挺干的,往年用打果汁的机器,要加很多水才能打细,所以很难炒
3.
打好的豆沙我觉得还不是十分细腻,这时用个大漏勺,用橡皮刀按压,并刮漏勺底,豆沙会变得很细,我觉得这很重要。
4. 豆沙加糖放不沾锅炒,分三次加油,真的只用不到15 分钟,已经在锅里成堆了,放凉会更干。
我对豆沙要求挺高的,一定要非常细腻,今年做得真的很好,可以和买的细沙相比。

Moon cake recipe:

Before cooking the mooncake, here are the preparation steps:

1. Syrup. A lot of people use store sold syrup and it turned out to be good. I don't know which one is best since I made my own syrup out of sugar, water, lemon juice, white vinegar and a little bit baking soda water to save cost since I used a lot of syrup.

2. Baking soda water. It is better to leave baking soda in oven for one hour then put it in small jar with water.

3. Baking dry flour: none stick cooking wok, put a little bit of cooking oil, put in the flour, keeping on stirring it until the flour turns into light yellow. 

4. Red bean sauce or green bean sauce. I made my own but red bean sauce can be easily bought from any Asian market.  Green bean sauce is easy to make: peeled green bean, soaked in water over night, put in rice cooker to cook, put in none stick cooking wok, stir in cooking oil, compressed milk, sugar. I heard of the big white bean is easy to work on but I haven't tried it yet. 

Flour:  it is up to gram since it is very important to balance sugar, oil and flour. This recipe can be used to make 3-4 big moon cakes. You can also use the store bought any wrap for wrapping up the filling. 

All-purpose flour: 200g.
Syrup: 110g
cooking veggie oil: 55g
Baking water: 1/2 tp
Pinch of salt. 
Mix above together and let it sit for at least one hour. Don't leave it overnight since you need to use it up the day you mixed it. 

Filling: 
Mixed nuts: walnut, pine nut, sesame seeds, sun flower seed, pumpkin seed, almond and so on. Lightly bake them and make sure they are cooked (pay close attention to pine nut and it can easily turn black), and either hand crush them or use a machine, just leave them half crushed since it taste better this way. 

Dry fruits: cut them. 

Mix above with cooked dry flower, oil and sugar (sorry I can't provide measurement for oil and sugar, the more you use the taste is better, but don't use that much!).  Then mix with either red bean sauce or green bean sauce. 

Follow the steps from this link to make moon cake: 

Bake: put in in the middle of the oven, 395oF for 6 minutes, take it out, brush with honey water, put back to oven 340oF for 7 minutes, and take it out to brush on honey water again, put back to oven 340oF for 7 minutes. Then turn on the broil, watch the cake turn into the color you like. (I burn my cake twice at the last step so don't leave the moon cake under broil. You need to watch it for every second)


Take it out, enjoy in after two days.

Stains provide no protection or gloss to bring out the figure of the walnut. My prefered finishing technique for walnut is to apply two layers of Watco Danish oil natural color according to the manufacturers instructions, then after drying for 72 hours I apply one or two coats of High Gloss Polyurethane Varnish. After the last coat of varnish has cured for 5 days I apply a thin layer of clear Briwax, paste wax. This procedure will provide the ultimate beauty and durability for the finish. The danish oil brings out the figure of the wood, the polyurethane protects it from moisture and scratches, and the wax provides a wear surface over the polyurethane that can be easiely renewed. It is likely the most complex finishing process that you will be given, but I find it to be well worth the effort. I have developed this procedure over the course of several walnut projects.

三藩公交去金门桥

三藩是个旅游城市,公交系统特别发达,就和北京一样。我这么写的时候心里实际很辛酸, 实际北京比三藩差太多了。 我夏天回去的时候, 从朋友家做公交,让司机给刷了, 弄到总站把我们凉一个小时,旁边几十辆出租没人拉我们,因为是下班高峰。后来出高价才有人拉我们走,一路就和我们抱怨, 弄得我最后又多给他点,还没好脸色给我们。

三藩公交去金门桥. 金门桥的网站说特别方便,引文: 
To/from Union Square: Board any GGT bus (Routes 10, 70, 80 & 101) at Mission & 5th streets, in front of the old Mint Building. Mission & 5th is a short walk south of Union Square. All buses stop at the northbound Toll Plaza bus stop

没有说的是,这些 10啊70啊都是GOLDEN GATE TRANSIT 系统,和MUNI 两个系统,是蓝色黄色的标志。 好吧,我们在 old Mint Building 旁边转半天,后来问个做公交的才知道是什么标志, 在哪里等车。 车来后不接受我们的CITY PASS 上的MUNI票, 要另交钱,很便宜,才4刀,幸好我身上有零钱,他们车上司机不找钱的。

另外车很舒服,没什么人,大概不是专门给旅游人准备的车。 注意千万在桥的northbound Toll Plaza bus stop 下车。万一跟车过了桥,那第一站就一个迈以外了。

下了车就是INFORMATION CENTER, 买东西问信息很方便。 我们到桥上走到中间然后回来的。 我看有人租自行车。 准备回来后和老大练自行车, 这要骑个来回多好。

回来后问了怎么去渔父码头,他们给的信息特别仔细,原来他们旁边就是MUNI 28, 坐到哪里转30, 转车的时候我们跟几个小伙子,他们指给我看 30路的站牌,啊呀,是在路灯的柱子上涂的黄漆,写了个BUS STOP。

后来我看到处都是去金门桥的蓝色黄色车,还经常在灯柱上看见公交车的站牌。 我也算半个三藩人了。

是为记。


这次还去了中国城买西洋参,850 Jackson st ,人很多店很小,他们还加了切片义务。不过大家还是自己去买要好。他们的切片因为是干切,出来的片不是那么漂亮,另外切片特别费时间。我们帮人带了 8磅,切到他们下班,最后我们自己买的有些都没切片。 如果让/给别人带买很麻烦结果也不一定满意。

旅馆: 我找了好久才找到这个旅馆, 好处是价钱不高, 交通方便,提供早餐, 比较安全干净。  交通是一出门走一点就是公车站,三番最著名的当当车站。 基本去哪里都能去。

Pure tung oil. Extracted from the nut of the china wood tree. Used as a base in many blended finishes. Available from catalogs and hardware stores. Difficult to apply, requires many coats, good water-resistance.
Raw linseed oil.Pressed from flax seeds. Not to be confused with boiled linseed, which contains metallic driers. Listed as a food additive by the Food and Drug Administration (FDA). Very long curing time, good looks, low water-resistance, frequent reapplication.
Mineral oil.Although derived from petroleum, it is colorless, odorless, tasteless and entirely inert. Sold as a laxative in drug stores and as a wood finish in hardware and kitchen-supply stores. Simple to apply, low waterresistance, frequent reapplication.
Walnut oil.Pressed from the nuts of the walnut tree. Sold as a salad oil in health food stores and in large grocery stores. Walnut oil dries and won't go rancid. Easy to apply, frequent reapplication.
Beeswax.The work of the honey bee. Can be mixed with an oil to create a better-smelling, slightly more waterrepellent finish. Sold in woodworking and turning catalogs.
Carnauba wax.Derived from the Brazilian palm tree. Harder than beeswax and more water-resistant. Can be used straight on woodenware as a light protective coating or a topcoat polish. Sold in woodworking and turning catalogs.
Shellac.A secretion from the lac bug. Harvested in India. Super blond shellac in flake form is the most waterresistant variety. A film-forming finish. Sold in woodworking catalogs and hardware and art supply stores.

Not surprisingly, the California Science Center offers the ultimate summer science camps for LA area kids. More than 25 courses are available on topics that include robotics, wizardry, outer space, skate science, pirate science, 3-D animation, and movie special effects along with the classic biology, chemistry, and physics offerings. Camps range from preschool parent-child classes through mind-blowingly amazing eighth grade explorations.

Heal the Bay runs a Science Adventure Camp at the Santa Monica Pier Aquarium that offers a hands-on, science-based, environmentally conscious learning experience right at the beach. Kids spend part of the day observing, handling, and learning about all sorts of marine life in the lab, and part of the day outside finding where science meets surf. Other activities include games, crafts, puppet shows, and kissing sea cucumbers. The first three weeks may be booked by the week only; the last week can be booked by the day. No before or after care is available, but when you pick up - you've got the Pier and the beach!

explore the Pacific ocean and its inhabitants during three-day and week-long day camps at the Aquarium of the Pacific. Campers of different ages participate in different class programs, with all getting behind-the-scenes opportunities to help care for and feed the marine life and learn about water quality. How lucky are our kids that so much Southern Californian science happens at the beach? The Ocean Institute is right in the thick of things, with camps that explore marine biology both in the lab and at sea - from plankton to whales and everything in between. Older kids even get a chance to build and operate underwater ROVs. The Institute's camp programs include day, weekly, and overnight options. Older teens (14-17) can participate in the marine science careers internship program.

A metro area as enormous as greater Los Angeles is bound to have far more hidden treasures than most people can keep track of; that's the only reason we can think why America's Teaching Zoo at Moorpark College so often flies under the radar. Students of the college program are learning to be animal trainers, working with all sorts of exotic and local rescue animals, and during summer camp our kids can learn along with them! Each week finishes with an animal show that parents can attend, in which the kids are the trainers.

One of those camps with a name that says it all, Rolling Robots offers different levels of technical challenge for different ages. Littlest kids get started experimenting with electronics, while older kids get to design robots and program them, finishing the week with the ability to build competition-level robots on their own - ready to take over this world or another of their choosing.

ROBOTIX Experience, in which campers use California Science Standards to create robots, robotic creatures, and robotic vehicles. The curriculum, developed in cooperation with Caltech/JPL, lets kids who fantasize about building robots live out their fantasies, applying science, math, and engineering principles to intricate robotics kits that leave Legos (much as we love them) in the dust.

Mad Science is a national company offering summer science camps in a wide variety of locations around Southern California. Serving so many different communities means that the prices and curricula vary quite a bit, but the theme that runs throughout is having fun with science in local community venues at reasonable prices. Individual camp weeks include Secret Agent Lab; Claws, Codes, & Constellations; Red Hot Robots; NASA Space Academy, and Crazy Chemworks.
And finally, if the science-inclined camper in your family happens to be a girl entering grade 4-9, you should definitely look into Sally Ride Science Camp. The legendary astronaut offers her remarkable girls-only summer science experience at five college campuses across the country, and Angelenos are lucky to have one of those be Caltech in Pasadena, July 9-13, 2012.
